(Head Chef)
We are looking for a Head Chef for our client Lakehead University. You will be reporting to 955 Oliver Rd, Thunder Bay, ON P7B 5E1, Canada.

JOB DUTIES:
- Plan, organize, and oversee all culinary operations across multiple campus dining locations, including cafeteria services, food outlets, and on-campus catering, ensuring compliance with Aramark’s contractual obligations with Lakehead University.
- Direct the daily production of high-volume meal service (breakfast, lunch, dinner, and event catering), ensuring all food items are prepared according to standardized recipes, portion specifications, and service timelines.
- Lead the preparation of a diverse menu portfolio, including hot entrées, cold stations, grab-and-go items, and specialty dietary offerings (vegetarian, vegan, halal, gluten-free), ensuring consistency in quality and presentation.
- Develop and implement rotating menu cycles (weekly/seasonal) based on student demand, academic calendar, and campus events, while maintaining nutritional balance and cost efficiency.
- Supervise, train, and evaluate a team of cooks, prep staff, and kitchen support personnel; implement structured scheduling, performance management, and ongoing skills development programs.
- Enforce strict compliance with provincial and corporate food safety standards, including HACCP principles and Aramark’s SAFE and Quality Assurance (QA) programs.
- Monitor food cost controls, including portioning, waste reduction strategies, and yield optimization, ensuring profitability and operational efficiency.
- Manage inventory systems, including forecasting, ordering, receiving, and storage of food products and supplies, maintaining optimal stock levels while minimizing spoilage.
- Conduct regular inspections of kitchen facilities, equipment, and storage areas to ensure cleanliness, preventive maintenance, and compliance with occupational health and safety regulations.
- Collaborate with Aramark management and the university to continuously improve service delivery, enhance customer satisfaction, and implement innovative culinary solutions.
- Maintain leadership presence during peak service periods, ensuring operational continuity, staff coordination, and high-quality output under pressure.
Prerequisites:
Education: Bachelor’s Degree or equivalent
Experience & Skills: 5 years of experience in food industry
Language: English
Annual Salary: $62,000 for 40 hours per week
Starting Date: As soon as possible
Terms of Employment: Full-time and permanent
